Merlot
Description: Merlot-based wines usually have medium body with hints of berry, plum, and currant. Merlot has slightly lower natural acidity than Cabernet and generally less astringency, therefore usually a more lush mouth-feel. Earlier than Cabernet Sauvignon to mature in bottle, Merlot is held in higher esteem by wine drinkers than by wine collectors.
Food Pairing: Veal, meat loaf, Italian-style sausage, lamb or beef stews, roast lamb, duck with fruit sauce, fish like salmon and tuna, dishes with mushrooms and berries

Cabernet Sauvignon
Description: Cabernet Sauvignon wines are generally full-flavored, with a stronger flavor than Merlot for instance, and with a smooth and lingering "finish". Cabernet Sauvignon has a well defined aroma. They are characterised by a smell of violets, blackcurrant, cedar and spice and are more often dominated by aromas of chocolate, ripe jammy berries, oak, pepper and earth.

Pinot Noir
Description: Pinot tends to be of light to medium body with an aroma reminiscent of black cherry, raspberry or currant. The grape's color when young, often compared to that of garnet, is often much lighter than that of other red wines. Joel Fleischman of Vanity Fair describes pinot noir as "the most romantic of wines, with so voluptuous a perfume, so sweet an edge, and so powerful a punch that, like falling in love, they make the blood run hot and the soul wax embarrassingly poetic.
Food Pairing: Beef, Lamb, Veal, Pasta/Vegetarian, Chicken, Turkey, Pork, Fish/Seafood
