96 points Wine Spectator A laser beam. Beautifully focused, intense and densely flavored with lime, honey and chanterelles in butter. So rich it's almost too much, but the vibrant acidity keeps everything in check and driving through the long finish. (11/ 2000) 95 points Stephen Tanzer's International Wine Cellar Multidimensional nose of lemon, apple, minerals, nut skin, mushroom, honey, toffee and coffee. Tiny bubbles. Powerful, rich and solid as a rock, with strong mineral underpinning. Great concentration and structure. Finishes with almost painful intensity and remarkable persistence. Extremely expressive on the nose, but still evolving in the middle palate and likely to be long-lived. About Estate:
The Drappier vineyards are the basis on which the essence and consistency of our CuvTes are built. Our ancestors chose only those vineyards which are particularly well exposed, with a high chalk content in the soil, producing characterful wines. Cultivated with special care, the family vineyard has been fertilized with natural manures just as they were in the last century. The methods used are simple, not to say basic, in order that nature can express itself freely. The crop coming from these vineyards thus produces wines which faithfully reflect the "terroir".

Pairs well with caviar, smoked salmon, canapes, prosciutto, cold cuts, egg dishes, sushi and soups.

About Varietal:
Champagne is produced as a blend between the Pinot Noir, Pinot Meunier, and Chardonnay grapes. The amount of each of these grapes differs from shipper to shipper, and some Champagne ? such as blanc de blancs or blanc de noir ? uses only Chardonnay grapes or only Pinot Noir grapes. There are three primary levels of quality within any given Champagne shipper. Non-vintage Champagne uses grapes blended from a number of years, vintage Champagne uses all grapes from one specific year, and prestige cuvTe Champagne uses all grapes from one specific year, from the first pressing, and has aged for a longer period of time. Not every year produces either vintage or prestige varieties, though recently about one-in-three years have done so. Recipe:
Party-Size Champagne Cocktail Recipe

An intimate setting or wedding reception begs for one of these Champagne Cocktail recipes. But don't stop there! A champagne cocktail adds a special touch to any party suitable for champagne. Just use the party-size recipe version below and follow the make-ahead tips for easy party preparation.

INGREDIENTS
-1/2 cup simple syrup
-1 1/2 teaspoons Angostura bitters
-1 tablespoon lemon juice
-1/4 cup Cognac (or Brandy or Grand Marnier)
-2 (750ml) bottles champagne
-Orange twist halves and cocktail cherries for garnish

Simple Syrup
: Dissolve 1 part sugar in 1 part boiling water. Cool.

Chill all ingredients before assembling. Combine simple syrup, bitters, lemon juice and Cognac and set aside. Refrigerate if making ahead. When you are ready to serve, thread the orange twists and cocktail cherries onto picks and insert in champagne flutes. Pour the simple syrup mixture into a pitcher. Gently stir in the champagne. Pour into flutes. 14-16 servings.

Tip:Make as much of the simple syrup mixture as you think you'll need ahead of time. Use a scant cup of the mixture per 2 bottles of champagne.
