 About Estate: Hailing from the great Rheingau, Anthony Hammond makes Riesling from the Rhine's famously steep situations, and sturdy Burgunder-stle Pinot Noir. The wines are crafted under the philosophy of "less" in the winery and the management of the vineyard effectively nature-bearing "more". The development in the cellar is carried on with careful pressing and long-barrel-ripening. The goal is to result in a maximum of flavours and natural complexity. Grapes are harvested in small batches by hand. Membrane pressed. One third is fermented under pressure in temperature-controlled tanks which results in a great tasting wine.

 About Varietal: Riesling is a white grape used in producing white wine throughout the world. Like the somewhat similar Gewurztraminer, Riesling is considered an excellent starting wine for those interested in developing their palettes or an appreciation of white wine. Riesling has, more than any other wine, gained an undeserved negative reputation. In many connoisseur's opinions however, it is among the finest of the white grapes, and yet in the minds of many, it is demonized as a dull, sickly-sweet wine of little or no character. True Riesling, is a joy of a white wine. More than nearly any other white wine, it has the potential to age over long periods of time and transform into a truly noble specimen û on a par with even a red Bordeaux. Riesling, like Gewurztraminer, has an exceptional ability to take the distinctive flavors of its local environment and weather and transfer them to the drinker through the wine. This communication of terroir is one of the crucial elements of great wine production, and RieslingĈs ability to do it with relatively little coaxing is an enormous boon for the grape.
Rieslings most often taste of fruit with a healthy dose of acidity, and occasional metallic tones. Over time, the fruit recedes somewhat with the sweetness of the wine, leaving a tarter wine. Towards the end of its lifespan, Riesling begins to take on an aroma of slight kerosene and mineral flourishes. Riesling is one of those white grapes, susceptible to the noble rot of botrytis, used to make the extremely sweet dessert wines that are a hot item in some circles. Indeed, Riesling was the grape with which botrytis was first discovered near the end of the 18th century, and these late-harvest Rieslings are often among the most expensive of the bunch.

 Recipe: LEG OF LAMB POACHED IN WHITE WINE COURT BOUILLON
INGREDIENTS 1 small leg of lamb, boned and tied Garlic cloves, dried rosemary 1 bottle white wine 2 onions, stuck with cloves 1 carrot 1 stalk celery 1 tablespoon salt 1 teaspoon freshly ground black pepper PREPARATION Pique the boned and tied leg of lamb with slivers of garlic (cut small gashes and insert garlic) and rub it will with dried rosemary. Put wine, and equal amount of water, vegetables, and seasonings in a large kettle, bring to a boil and simmer for 25 minutes. Add lamb and bring liquid to a boil again. Cover the pan, reduce heat and simmer, allowing 15 minutes per pound of meat. Serve with Sauce Soubise. With this, drink chilled Pouilly FuissT.
