 About Estate: Puligny-Montrachet, situated to the south of Meursault and to the north of Chassagne-Montrachet, shares with Chassagne a handful of the greatest white wine vineyards in the world. The grands crus of Le Montrachet and BGtard-Montrachet straddle the border between the two communes; those of Chevalier-Montrachet and Bienvenues-BGtard-Montrachet lie entirely within Puligny. Of the commune's 1,260 acres of A.O.C. vineyards, 52 are occupied by these four grands crus, and an additional 247 are apportioned over eleven premier crus, which also enjoy this ranking for red wines. Only 300 hectolitres (3,330 cases) of red wine, of a total average of 8,324 hectolitres (92,500 cases), are produced in the commune in a year. Originally a Gallo-Roman village, "Puliniacus," as recorded in the documents of Pope Urbain II in 1095, became Puligny-Montrachet in 1879. Its preeminence as a white wine village is comparatively recent: early plantings were in Gamay, later supplanted by wheat, cassis and mulberries. Only since the second World War has it become virtually overtaken by Chardonnay vines.
The premier cru vineyards of Puligny-Montrachet, noted for the exceptionally high and consistent quality of the wines they produce, stretch across the upper half of Puligny's slope from Meursault to Chassagne. This progression is accompanied by an increasing depth and firmness in wines, culminating with the four grand cru vineyards along the Chassagne border. The FolatiFres climat lies near the summit of this slope, above Clos de la Garenne roughly midway between Meursault and Montrachet. With 44 acres covering the three parcels of En La Richarde, Peux Bois and Au Chaniot in addition to the principal parcel of Ez FolatiFres, it is the largest of Puligny's premiers crus. FolatiFres is also the most recent: prior to its elevation to premier cru in 1959, it was covered by an underbrush inhabited principally by rabbits. This phenomenon is likely responsible for the vineyard's name, derived from "folGtrer", meaning "to frolic." Domaine des HTritiers Louis Jadot is proprietor of .59 acres of vines in Les FolatiFres which produce a wine marrying intensity and finesse, with a full richness tempered by great elegance. The bouquet allies well-bred fruit with notes of almonds and minerals, repeated on the palate and in the long finish.

 Recipe: Ginger Orange Scallops with White Wine Recipe
1 lb scallops 1/4 cup orange juice 1/4 cup white wine 1 1/2 tsp ground ginger
1 tsp soy sauce 3 tbsp butter
Mix orange juice, wine, giner, and soy sauce in a small bowl and blend well. Melt butter in large skillet, add scallops and cook, stirring frequently, until scallops are opaque (2-3 minutes). Remove and place on serving platter. Add OJ mixture to the pan and bring to boil. Cook, whisking, until sauce is slightly reduced (1-2 minutes). Return scallops to the pan and cook for around 1 minute.
