Product Notes: Better than 2000 vintage, 2001 has breed and acidity that brings lovely freshness and remarkable vivacity. Attractive aromas of intense red berry fruit and black pepper. The structure on the palete is dense and harmonious and the long lingering finish promises along aging in the bottle. you may need to wait between 7 to 15 years in order to enjoy this wine at its peak. Really pretty aromas of blackberries, chocolate and spice. Full-bodied, with refined tannins and a lovely long finish. Delicious, with a silky texture. Hard to believe, but I like this better than the 2000. Best after 2006. 4,500 cases made. �Wine Spectator

 Food Pairing: Red Bordeau is excellent with beef, lamb, grilled veal, game such as pheasant and poultry such as turkey. The wine pairs well with food made with rich sauces. Other good accompaniments are: tandoori, pGtT, bean dishes and stews.

 About Varietal: The well-balanced nature of clarets ( another name for red Bordeaux ) comes from the subtle blend of several grape varieties. Merlot is an early-ripening variety that contributes a spicy, fruity aroma as well as roundness and softness.Cabernet Sauvignon, which ripens later, is deeply coloured and aromatic. Its tannin gives wines a remarkable ageing potential. Cabernet Franc confers a very elegant bouquet . Petit Verdot and Malbec are also used, but to a lesser degree.

 Recipe: BAKED PORK CHOP A LA BORDEAUX
4 heavy cut loin pork chops Salt Pepper 1/8 tsp. nutmeg
1/8 tsp. ground cloves 1 tbsp. brown sugar 1 1/4 c. Bordeaux wine Spiced apples
Dry chops and season with salt and pepper. Broil chops until golden on both sides; drain. Sprinkle chops with nutmeg and clove. Add brown sugar and wine to oven-proof casserole pan with chops and bake at 350 degrees covered for 15 minutes. Remove cover and bake an additional 15 minutes. Serve garnished with spiced apples.
