1 shallot, finely minced
1 clove garlic, finely minced
8 ounces chanterelle mushrooms
4 ounces Pinot Noir
8 ounces demi-glace
Salt and pep

Winemaking wise – our philosophy is basically to step back and let nature take its course, for the most part. Our job, outside of totally hands-on vineyard work, comes when its time to select the barrels for the final wine that you will enjoy. This is the artistry of winemaking and no two domains would do it quite the same. Thus we can have many Echezeaux, but only one Domaine Romanée-Conti.
