-Merlot Only for the brave, the dusty, dungeon like Vampire Merlot is surprisingly delicious; smooth and ethereal, this supple wine just slides down the palate; great with red meats

-Chardonnay "Citrus fruit aromas combine with mineral notes on the nose, in an unoaked, lighter, elegant style of chardonnay more typical of the northern Burgundian and Chablis style than the fat, oakier style of this French oak variety. The straw-green color indicates a clean, well protected wine, confirmed by fresh, structured fruit flavor. A zingy acid backbone gives this wine the strength to age for a long period. A 20% malolactic fermentation fills out the flavor of the wine, giving it good complexity, while not detracting from the crisp freshness.

-Pinot Noir "Vampire Pinot Noir is well suited to Venison and game dishes, and is equally well adapted to pasta dishes featuring basil and tomato sauces. It can also be enjoyed as an aperitif or as an after dinner wine with snacks and blue cheeses.

Cabernet "This bottle posseses the hallmark characteristic of the Cabernet variety, a wild spicy nose with bell pepper tones that the French call "Sauvage." Intensely dark purple in color, this full bodied wine has a rich fruit flavor and complex oak structure. Vampire Cabernet is a well made, modern example of the "king" of red wines, with fine tannins and a mixture of 70% French and 30% American oak.
