 About Estate: Parador is a fairly new winery that began as a dream to grow the Tempranillo grape in California. In 1988, the first clones of Tempranillo were acquired from some of the top producers of Tempranillo in Spain's Ribera del Duero and Rioja regions. The vines were then brought back to California to a very small plot of land in Napa Valley called "Rancho Chimlies". Over the winery's short existence, it has already received much praise from authrorities in the wine industry.

 Food Pairing: Tempranillo goes well with many Spanish dishes. Tempranillo goes especially well with lamb, chorizo, grilled seafood, roasted peppers, sheep's milk cheeses, and all varieties of ham including serrano ham and prosciutto.

 About Varietal: Wines made from Tempranillo tend to have a nice fruity sweetness. They tend to have light tannins, and light acidity.
