Product Notes:
This well-bred wine displays a fresh off-the-vine bouquet of grapefruit and grass with hints of minerals. Extremely crisp and refreshing, it has crystal-clear flavors of sweet grapefruit and subtle melon. Bright acids and intense fruit help form its wonderful structure and balance. It has great body and a long finish of grapefruit and melon. Serve with raw oysters, grilled salmon or pasta. The crisp, fresh fruit was destemmed but not crushed, then moved to 15-ton refrigerated dejuicing tanks for almost 12 hours. About 90% of the juice was drained as free run and the remaining skins were pressed with minimal pressure. The juice was cold settled for three days, racked into stainless steel tanks and then inoculated with Champagne yeast. Fermentation lasted for 18 to 25 days at about 55 degrees, and was arrested by lowering the temperature to 28 degrees Farenheit. The wine was cold stabilized and lightly filtered before bottling.

Enjoying it before dinner with almost any kind of appetizer, shellfish, fish, chicken, pasta and goat cheese (it loves goat cheese!!).

Recipe:
Ginger Orange Scallops with White Wine Recipe
1 lb scallops
1/4 cup orange juice
1/4 cup white wine
1 1/2 tsp ground ginger
1 tsp soy sauce
3 tbsp butter
Mix orange juice, wine, giner, and soy sauce in a small bowl and blend well. Melt butter in large skillet, add scallops and cook, stirring frequently, until scallops are opaque (2-3 minutes). Remove and place on serving platter. Add OJ mixture to the pan and bring to boil. Cook, whisking, until sauce is slightly reduced (1-2 minutes). Return scallops to the pan and cook for around 1 minute.
