The wine is pale gold in color with mineral and green apple notes on the nose. The pallet is quite richly textured Considering its vinification and there are flavors of white peach, bosc pear and other stone fruits. Crisp and pleasing acidity keeps the wine fresh on the palate, with the mineral and fruit notes adding a fascinating tension to the wine that resolves smoothly on the finish. Here is an example of how beautifully Chardonnay fruit can express its individuality. It is truly one of the great white wine grapes, and with this style, we are attempting to express its true, unembellished character, as grown here in the Santa Lucia Highlands
Chardonnay goes well with chicken, seafood, and fish.
Chardonnay originated in the Burgundy area of France. There are many world-class Chardonnays being produced in California.
Ginger Orange Scallops with White Wine Recipe
1 lb scallops
1/4 cup orange juice
1/4 cup white wine
1 1/2 tsp ground ginger
1 tsp soy sauce
3 tbsp butter
Mix orange juice, wine, giner, and soy sauce in a small bowl and blend well. Melt butter in large skillet, add scallops and cook, stirring frequently, until scallops are opaque (2-3 minutes). Remove and place on serving platter. Add OJ mixture to the pan and bring to boil. Cook, whisking, until sauce is slightly reduced (1-2 minutes). Return scallops to the pan and cook for around 1 minute.
